
This is a very simple recipe. All it takes is time. The cloves will brown and crisp nicely when fried or in the oven. They can be spread on bread, folded into potatoes, and used in other ways.

- Pack peeled garlic cloves in salt and let them sweat for a while.
- Wipe off the salt and moisture with paper towels.
- Submerge the garlic with some rosemary in olive oil.
- Cook the garlic in oil at very low temperature (well below boiling point of water) in an oven for a few hours. Other recipes call for only about 45 minutes in the oven but leave them several hours to replace all the water in the garlic with olive oil.
- Remove rosemary before sealing while hot in clean jars.
